Zucchini “Pasta”

If you want an easy, breezy recipe that will totally TOP your intimate dinner for two… MAKE THIS!! You’ll definitely thank me later! I’m talking Fresh, full of flavor and absolutely delicious!! You can’t go wrong and it takes no time at all! 

Serves 2

8 ounces of cherry tomatoes, sliced

1 clove garlic, thinly sliced

1/4 cup chopped walnuts

2 tablespoons torn fresh basil, plus leaves for garnish

2 tablespooons extra-virgin olive oil, plus more for drizzling

Sea salt (**Disclaimer: I used kosher salt and it was fine.)

1 zucchini, thinly sliced lengthwise, slices cut into 1/4 inch-long strips (**Use a sharp knife to cut zucchini into noodlelike strips.)

In a bowl, combine tomatoes, garlic, walnuts, basil, and oil. Season with salt. Let stand 20 minutes. Toss with zucchini and garnish with basil.
